This is so easy to make and costs a fraction of what the commercial kind does. The end result is more like crema than commercial creme fraiche (which is like sour cream in texture). Crema is not watery, but looks like someone whisked together milk and sour cream.
Crema or Creme Fraiche – makes 1 cup
1 cup of cream (not ultra-pasteurized)
1/2 tbsp. buttermilk, creme fraiche, or crema (can be store-bought or from previous batch)
Add ingredients to a small glass container (ball jar works great!). Cover tightly, shake, and place in warm spot for 20 to 24 hours. Refrigerate promptly.
